Cabbage is SO easy to dehydrate, I don't know why more folks don't do it!

Simply slice, dry, condition, and store! It's great to add to ramen, soups, casseroles, and even cole slaw.

The cole slaw made from dehydrated cabbage isn't quite the same as from fresh, but cabbage still has a bit of a toothiness (not crisp, but not soggy) when rehydrated, and some folks like that to make cabbage.

But a question I'm asked often about cabbage is if it can be dehydrated from the bag at the store. YES! That's the easy way to do it - or any kind of slaw mix. Just rinse, put on trays, dry, condition and store!
